great idea : marshmallows as cupcake frosting
I saw this idea in September's Real Simple and thought the suggestion sounded good enough to try next time I bake cupcakes.
When your cupcakes have about three minutes left to bake, pull out the tin and place one marshmallow on top of each cupcake. Return the tin to the oven for the remaining time or until the marshmallows are slightly melted but still fluffy.

YUM! My girlfriend made some s'more cupcakes for my birthday one year and did this instead of the complicated frosting. It was so good.

I love this idea! I made S'mores brownies awhile ago, with a graham crust and marshmallows melted on top. They were pretty amazing, so I'm betting these are, too!
